  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup sour cream or Greek yogurt
  • 1 cup cooked bacon bits optional
  • 1/2 cup chopped chives or green onions
  • 1/2 cup steamed broccoli optional

Instructions

  • Wash and scrub the potatoes thoroughly. Pat them dry with a towel.
  • Prick each potato several times with a fork to allow steam to escape during cooking.
  • Rub the potatoes with olive oil, then sprinkle with salt and pepper.
  • Preheat your air fryer to 400°F (200°C).
  • Place the potatoes in the air fryer basket. Cook for 35-40 minutes, turning them halfway through for even cooking, until they are tender when pierced with a fork.
  • While the potatoes are cooking, prepare your desired toppings. In a mixing bowl, combine cheese, bacon, chives, and any other toppings you like.
  • Once the potatoes are cooked, remove them from the air fryer and let them cool slightly.
  • Cut a slit down the center of each potato and gently squeeze the ends to open them up.
  • Add a generous scoop of sour cream or Greek yogurt, then top with cheese, bacon, chives, and any additional toppings.
